Show Us Your Life - Favorite Bible Verse

This week, Kelly asked us to share our favorite verses - what a great thing to share!!! I have tons and tons of favorites but here a few of my all-time favs -

I love this verse, especially during difficult times in my life it's been a great source of strength for me.

For God has not given us a spirit of timidity, but of power, and of love, and of wise discretion.
2 Timothy 1:7

During times when I need to remember that God's timing is perfect and mine is not - kinda something I struggle with. ;)

He has made everything beautiful in its time. Ecclesiastes 3:11

This list just wouldn't be complete without this verse - it's just so comforting.

And remember, I am with you always... Matthew 28:20

Show us your life - Favorite Charities

There are so many wonderful charities out there but my absolute favorite is CASA. CASA (Court Appointed Special Advocates) supports children who end up in the court system through no fault of their own, but because of their parents'. CASA protects and helps the court make the best decision for the children's future. It's a great organization and if you ever have the opportunity to get involved I highly suggest it!!

Show Us Your Life - where do you shop?

This week, Kelly's topic is Shopping - yay!!! What a great topic, huh?!?

I get usually pretty overwhelmed in bigger department stores (....I think it's the OCD - ha!) so, I pretty much stick to smaller stores. I'm your classic "champagne taste on a beer budget" kind of girl so I have to get creative when I shop. ;)

Target - do I even need to say anything else?!? I think we all know and love this place! :) It's such a great place to find pretty much anything! *Sigh* I just love Target!!

Lately, I feel that Old Navy has become my 1st stop in a shopping search....can't beat their low prices! Plus, they have some pretty cute doggies stuff - ha! I just couldn't resist throwing in a doggie comment! ;)

Francesca's is a SUPER cute place - they sell lots of fun clothes, great wall hangings, cards, etc - bottom line, it's a great store and the perfect place to look when you need a gift for a girl friend.

My main message with Betsey's Store would be: Never, never underestimate the power of a great sale. ....Back to my beer budget - I really can't afford anything they sell for full price, but their sales - that's where it happens for me! Ha! :)

Ahhh, Banana - How I love thee! Gorgeous stuff!! I recently purchased my grey "interview" suit from here and....since I got the job....I'm even more in love with Banana! Lol!!!

If I could buy my entire wardrobe from this store, I probably would....ok, maybe that's a bit of an overstatement but is there ever a store you enter and think, "OMG, I want everything!!!" - do you know what I mean?!? I especially love their dresses! ...Short story - when Kevin and I were thinking about doing a destination wedding - I had the perfect dress picked out from WB's Wedding Line (which they don't really have anymore - so sad)!! Sometimes, I think I should have bought that dress anyway! Ha!! One can never have too many dresses, right?!? Lol!! ;)

The Limited is a fantastic place to go for pretty much anything - and, they always have great sales! You know I *heart* a sale!!

I couldn't do a shopping post without mentioning TJ Maxx - Seriously, they have EVERYTHING! I've honestly seen a kitchen sink there before - no joke! Currently, they have a really neat Cuisinart wine refrigerator I want....Kevin just doesn't seem to understand why we "need" a separate wine refrigerator when we just purchase a brand new fridge.....boys, they just don't understand. Lol!! :)

Show Us Your Life - Christmas Cookies & Treats

Kelly at Kelly's Korner is hosting a cookie recipe exchange! Sooo fun!! And, a great way to get some ideas for some yummy Christmas goodies!! Here are a few holiday favs at the Rooneys!

Peppermint Bark

Ingredients:
  • Crushed candy canes, to yield 1 cup
  • 2 pounds white chocolate
  • Peppermint flavorings, optional
Directions:
Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller. Melt the chocolate in a double boiler. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired.) Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (like peanut brittle.)

Sugar Cookies

Ingredients:
1 1/2 cups powdered sugar
1 cup margarine or butter softened
1 egg
1 teaspoon vanilla
1/2 teaspoon almond extract
2 1/2 cups all purpose flower
1 teaspoon baking soda
1 teaspoon cream of tartar

Directions:
Mix powdered sugar, margarine, egg, vanilla and almond extract. Stir in flour, baking soda, and cream of tarter. Cover and refrigerate at least 3 hours.

Heat over to 375 degrees. Roll dough on lightly floured rolling board. (Also roll on floured covered surface) Cut into desired shapes. Place on ungreased cookie sheet. Bake until edges are light brown, 7 to 8 minutes

Chewy Gingerbread Cookies

Ingredients:
  • 3 cups all-purpose flour, preferably unbleached
  • 3/4 cups firmly packed dark brown sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1-1/2 sticks unsalted butter, cut into 12 pieces and slightly softened
  • 3/4 cup molasses
  • 2 tablespoons whole milk

  • Directions:
In a small bowl, combine the molasses and milk and stir together; set aside. In the bowl of the mixer, combine the flour, sugar, baking soda, salt, cinnamon, ginger, and cloves. Mix at low speed until combined (about 30 seconds). Scatter the butter pieces over the top and mix at medium-low speed until it resembles very fine meal (about 90 seconds). Reduce the speed to low and drizzle in the molasses mixture with the mixer running and mix until the dough is moistened thoroughly (about 20 seconds), then increase the speed to medium and mix for 10 seconds more to combine. Cut out at least 4 parchment rectangles to fit the bottom of your sheet pans. Scrape dough onto a work surface and divide into 2 (I used a scale to be accurate: I divided it into 2-502g masses). Place each dough half onto its own parchment rectangle and cover each with another parchment rectangle. Pat out each with your fingers through the parchment into a rough rectangle, then roll each into an even 1/4-inch thickness sandwiched in between the 2 parchment sheets. Stack the dough sheets (still intact in their "parchment sandwiches") onto a sheet pan and freeze until firm, about 20 minutes, or refrigerate 2 hours or overnight.

Place a rack in the upper and lower-middle positions of your oven and preheat to 350°F (177°C). Line 2 sheet pans with parchment paper (I just used the ones on my dough sheets, to conserve paper....trying to be green). Remove a dough sheet from the fridge and peel off the top parchment sheet, gently lay it back on the dough and put another sheet pan on top. Flip the whole set-up over and peel off then discard the other parchment sheet. Using a 3- or 5-inch gingerbread person cutter or a 3-inch cookie cutter, cut out shapes and transfer to the lined sheet pans, leaving 3/4 inch space in between. Bake the cookies for 8 minutes (for 3-inch people, which is what I used), or 8-11 minutes (for 5-inch people or 3-inch cookies), rotating the pans front to back and top to bottom halfway through. You're looking for set centers and for the dough to barely retain an imprint when touched gently with a fingertip. Don't overbake! They will set some more while cooling. Cool the cookies for 2 minutes on the pans then transfer with a wide metal spatula to a cooling rack.

Show Us Your LIfe - Christmas Trees

We all know, and *love*, Kelly's Show Us Your Life series - well it's time for the Christmas Tree Edition! I know, super exciting!!! ....Ok, well I'm pretty excited anyway - ha!

Since the Rooney's Christmas tree isn't quite what it usually is, I thought I'd include pictures from previous years too. On that note....we usually have a live tree and boy do I miss coming home to the smell of Christmas pine! I mean, I love the Yankee Candles' "Christmas Tree" but, it just isn't quite the same.

So...in case you missed it in a previous post - here's another look at this year's tree
    Christmas 2009

And here's a look back at previous years......

Here's the tree Kevin and I had last year - Christmas 2008!
....this picture was taken right after we purchased & decorated it and since it was a live tree we probably should have given the tree a little time to settle - lol!

And since we didn't actually spend Christmas at our home last year, here's a picture of the tree where we did spend Christmas....here's the crazy story of what happened - it turned out to be the most wonderful Christmas!!

Here's a look back to 2007 - we were blessed to have my younger brother spend Christmas with us this year.
....about the tree - does a decorating idea ever look great when you imagine it but then when you actually try to create said look it ends up looking like.....well, like someone put toilet paper on your Christmas tree??? Yeah, well that's what happened to me this with this Christmas - and then I was just too lazy to take it down - ha!

Christmas 2006 - wow, what a long time ago!!! In this picture you can even see our little Advent Calendar - love the Advent Season!!

....Can't wait to see all the other amazing Christmas trees!!
