Is it breakfast or dinner???


This summer, I have been especially blessed with an amazing internship! I have had the opportunity to do so many new things while perfecting some basic nursing skills. The best part about the internship is that now, more than ever, I know that nursing is exactly where I am suppose to be. The only challenge I'm having is that the second half of the internship is a 12-hour night shift rotation. And wow, it is a challenge! Unfortunately, unlike my friend Brian, I am not a night owl - at all. I'm such a morning person. I love, LOVE, mornings! I love the promise that each new day holds and lately, Omaha's morning weather has been absolutely perfect! I do have to say, I've seen some pretty amazing sunrises!

But.... back to the point of this post - When I left work this morning, I couldn't decide if I wanted dinner or breakfast. Since it was technically the end of my day I part of me wanted dinner but, since I had just seen the sunrise, the other part of me wanted breakfast. The only thing I knew for sure was that I was VERY hungry - lol! My love of mornings won out so, I made strawberry waffles. They turned out quiet tasty! :)


Ingredients:
2 cups all-purpose flour, approximately
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons sugar
3 whole eggs, beaten
3 teaspoons unsalted butter, melted
2 cups buttermilk
3/4 cups of strawberries
Vegetable oil, for waffle iron

Preheat waffle iron. In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.
Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately.
